    SOUTHWEST ZUCCHINI & BLACK BEAN QUESADILLAS


     
    Southwest Zucchini & Black Bean Quesadillas

    Serves: 2
    Ingredients
    • 1 yellow zucchini, finely chopped
    • ½ cup black beans (canned), rinsed and drained
    • 2 tsp olive oil
    • 1 tsp cumin
    • ¼ cup cheddar cheese or monterey jack (or mixture), shredded
    • 2 whole wheat tortillas
    • 2 Tbsp salsa
    Instructions
    1. In pan, sauté zucchini, beans, oil and cumin for 5 minutes. Place zucchini mixture and cheese on each tortilla.
    2. Fold in half and place into a clean pan over medium heat until cheese melts and tortilla is toasted (about 3 minutes per side).
    3. Top with salsa.
